Greeting to my new grandniece, LEANNE PAIGE . . . and Leanne Biscuits

Leanne Paige was born Saturday, January 21, 2017, at 11:30 p.m.

Congratulations to Kacy and my nephew, Nick!

I made lots and lots of biscuits for my family when they were growing up so I'm dedicating this recipe to Leanne.


 LEANNE BISCUITS  

       1 3/4  cups flour
       1/4 cup cornmeal
       1/2 cup sugar
                2 ½ tsp baking powder
                ¼ tsp salt

                1/2 cup soft butter
                 1/2 cup halved fresh or frozen cranberries
                1 cup milk
                1/2 tsp grated orange rind (optional)
                 
1.     Preheat oven to 425 degrees.
2.     Grease a baking sheet.
3.     Mix cornmeal, flour, baking powder, sugar, and salt in food processor.
4.     Add butter and process to fine crumbs.
5.     Turn flour mixture into a mixing bowl.
6.     Stir milk and cranberries into flour, stirring only long enough to combine.
(The secret to tender biscuits is minimum handling.)
8.     Drop about 6 to 8 large spoonfuls onto baking sheet.

9.     Bake for 15 minutes.
