Piquant Kale Salad . . . and, oh yes, the Covid

 KALE SALAD

1 bunch kale
2 tbsp lemon juice
2 tbsp light soy sauce (or tamari)
2 tbsp olive oil

Wash kale.  Remove stems and set aside to cook on another day.  Chop kale leaves into bite-sized.
Combine salad dressing (lemon juice, soy sauce, and olive oil) in a small jar.
Steam kale for only about 3 minutes: just until it turns color and is tender.
Shake dressing and pour over kale.  Fantastic!

Bryan and I started out for Tennessee.  A guy at a gas station cash register in Oregon joked a bit about the Covid when I picked up one chocolate bar but set it down when my eye fell on another.  "Just kidding," he said.  
But on March 10 things got scary when we started hearing about borders closing.  On March 14, I flew back home from Nashville.  Bryan stayed to be with Kepler because schools and day cares had closed.  When things had settled down, I was going to fly back to Tennessee for a longer visit and then Bryan and I would drive home together.
Well, that WAS the plan.
Friday, April 3, 2020: I went grocery shopping for the first time since I got back to Canada.  No toilet paper at Quality Foods and I got one of the last Sunlight dish-washing detergents.  But there were canned tomatoes and Kleenex and CHICKEN!  I also picked up a Lotto Max ticket indicating faith in the future.  

Meanwhile, Bryan is on the road back from Tennessee.  Last night, he was at a Motel 6 in Cheyenne.
"I'm done for the day.  Hey, the sun came out but it is cold as in sub-zero.  The GPS bless it's heart got confused with Laramie and Ft Laramie," he messaged.  "It was a long day with an ice storm and then a snow storm." 

Tonight, Bryan plans to be in Missoula, Montana.

April 4.  He made it!  His message:  "Today was a very long drive . . . sunny aside from an early morning fog patch and a few brief snow squalls.  Wyoming is still covered in snow but driving north into Montana there was very little snow."

Next up: Bryan will stay in Bellingham overnight because BC Ferries has just announced they are reducing the number of crossings and only Tsawwassen to Duke Point.
