Halloween, a Ukrainian Superstition, and BUTTERMILK POWDER

A Ukrainian Superstition . . .

as recalled by Mary (Leschyshyn) Stadnyk

If someone stares at you for a long time, you will get sick.

People called it vrokiy.  

Now for the remedy . . .

Go to a midwife on a certain day.

Females should go on one of the Women’s Days (Monday, Wednesday, or Friday).

The midwife melts beeswax, pours it on cold water, and removes the wax figure that appears.  She says what the figure looks like (pig, wolf, dog).  Then the ailing person drinks three times from the basin – each time putting their lips to a different part of the basin.


That’s it – all better.

This recipe is especially for anyone else who has buttermilk powder sitting on the shelf.  The coconut oil does a great job of masking the flavor of the buttermilk powder.

Or just use buttermilk.



PUMPKIN PECAN SCONES

2 cups flour
2 tsp baking powder
½ tsp baking soda
¼  tsp salt  (no salt works, too)
1 tsp cinnamon
2 tbsp sugar
½ cup coconut oil

3 tbsp buttermilk powder
1 cup water
½ cup cooked & puréed pumpkin
½ cup chopped pecans

*Start oven preheating to 425 or 450 (depends on your oven).
*Grease a baking sheet.
*Stir buttermilk powder into water and set aside.
*Blend first 6 ingredients together in a food mixer.
*Turn flour mixture into a large bowl.
*Stir in buttermilk, pumpkin, and pecans.
*Drop large scones onto baking sheets.
*Bake for 15 minutes.

Serve with Maple-Butter.  (Stir ¼ cup maple syrup into ¼ cup softened butter.)

Portland, Oregon with a 5 year old . . . and Blueberry Lemon Sponge Pie

The Duniway Hilton in downtown Portland has a nice indoor pool and the staff were great.  Upon spotting our group, the maître-d immediately would wave us to our comfy crescent-shaped booth.

DAYS 1, 2, and 3:

1.        Oregon Zoo: A.M. 
                    PM: Swim  

Evening:  Glow Mini-Golf     

2.       OMSI:  Museum of Science:  Younger children have a whole exhibit hall geared towards hand-on exploration called The Science Playground, built for kids 6 and under.
P.M. “Washington Park is next to downtown Portland and home to one of the best playground in the city.” 

3.       Children’s Museum A.M.
P.M. Washington Park was the perfect place to play again; this time Shark-Dragons with an energetic aunt.

BLUEBERRY-LEMON SPONGE PIE: my daughter said this was the best blueberry pie she has ever had. 

First, you cook the blueberries and a lemon sauce.
Incorporate the sauce in the meringue.  This creates the "sponge" on top.

Welcome SADIE LYNN . . . and her Great-Grandmother's Butterscotch Pudding (simplified method)

Here's a recipe that is perfect for kids . . . and everyone!


MARY STADNYK’S BUTTERSCOTCH PUDDING

¾ cup brown sugar, not packed
6 level tablespoons flour
1/8 teaspoon salt
1 egg
2 cups milk
¼ cup butter or margarine (Mary preferred margarine)

1.     Set out 4 to 6 pudding dishes.
2.     Stir together sugar, flour, and salt in a medium bowl.
3.     Beat the egg in another small bowl and beat in about half a cup of the milk.  Set beside the stove. 
4.     Melt the butter over medium heat in a medium saucepan.
5.     Stir in the sugar, flour, and salt.
6.     Add some of the milk and stir with whisk.
7.     Add egg and rest of the milk.  Stir with whisk. 
8.     Transfer pudding to dessert dishes and serve hot or at room temp.

If desired, you can put a small spoonful of whipped cream in the center of each pudding.
