BACK HOME – VESPER!

 March:  always an exciting month, but this year has been exceptional!  First Kepler, and now, back home, our other daughter's new puppy has joined the family!

Bryan’s Chicken Pasta Recipe


Ingredients

1 chopped onion, chopped
2 garlic cloves, minced
½ cup red wine

½ can tomato paste (160 ml/5.5 oz)
1 can plum tomatoes (800 ml/28 oz)

1 bell pepper, chopped
1sp oregano
1 tsp basil
2 cups mushrooms, sliced

½ cup flour
½ tsp pepper
½ tsp salt

4 chicken thighs

3 to 4 ounces spaghetti per serving

Preparation

1. sauté onion mix  (10 minutes)

2. sauté mushrooms  (10 minutes)

3. mix tomatoes, tomato paste, onions, garlic, bell pepper

4. place flour, salt, pepper in bag and coat each piece of chicken

5. sauté chicken ( 5 minutes on each side)

6. add wine to chicken; sauté 3 minutes

7. add tomato mix to chicken; simmer 20 minutes

8. add mushrooms, simmer 10 minutes

9. cook spaghetti, al dente ( 9 minutes)
