BRYAN, KEPLER, MAYBELLE, and SPICY FETA POTATO PEROGIES



Bryan enjoyed feeding and rocking his grandson.

Bryan arrived in Laredo last night and met Kepler for the first time.


Maybelle was beside herself at seeing Bryan again.

Bryan hadn't eaten so I served him the perogies I made with a fantastic new filling for Easter.

1 ¾ pounds potatoes
8 ounces feta
3 tablespoons Frank’s Red Hot Original Cayenne Pepper Sauce
1 egg
2 green onions, including white bottoms
1 teaspoon salt
¼ teaspoon pepper

For perogy dough and method, I never use anything but Mom’s because the dough is ALWAYS tender and perfect.  See:

                                           Frying the perogies is a great way of reheating them.
