Aunt Nellie and Mom . . . and Vareniki with Cilantro and Cheddar

Aunt Nellie (Nastia) was born May 8, 1919. 

Nellie's daughter, Marilyn,  

found this letter from Mary to her sister, Nellie 

and the picture Mom mentioned in her letter.

Mom was 88.

Here's a perogy filling that is super easy to handle:   

PEROGIES with CILANTRO & CHEDDAR

1.5 pounds potatoes

2 tbsp softened butter

6 ounces cheddar

1/3 to ½ cup minced cilantro

1 tsp salt

½ tsp pepper

*Boil potatoes in salted water until very tender.

*Meanwhile grate cheddar and mince cilantro and set aside.

*Rice a potato.  Sprinkle with some cilantro, cheddar, salt, and pepper.

*Repeat layers until all potatoes are riced.
