Welcome SADIE LYNN . . . and her Great-Grandmother's Butterscotch Pudding (simplified method)

Here's a recipe that is perfect for kids . . . and everyone!


MARY STADNYK’S BUTTERSCOTCH PUDDING

¾ cup brown sugar, not packed
6 level tablespoons flour
1/8 teaspoon salt
1 egg
2 cups milk
¼ cup butter or margarine (Mary preferred margarine)

1.     Set out 4 to 6 pudding dishes.
2.     Stir together sugar, flour, and salt in a medium bowl.
3.     Beat the egg in another small bowl and beat in about half a cup of the milk.  Set beside the stove. 
4.     Melt the butter over medium heat in a medium saucepan.
5.     Stir in the sugar, flour, and salt.
6.     Add some of the milk and stir with whisk.
7.     Add egg and rest of the milk.  Stir with whisk. 
8.     Transfer pudding to dessert dishes and serve hot or at room temp.

If desired, you can put a small spoonful of whipped cream in the center of each pudding.
