Portland, Oregon with a 5 year old . . . and Blueberry Lemon Sponge Pie

The Duniway Hilton in downtown Portland has a nice indoor pool and the staff were great.  Upon spotting our group, the maître-d immediately would wave us to our comfy crescent-shaped booth.

DAYS 1, 2, and 3:

1.        Oregon Zoo: A.M. 
                    PM: Swim  

Evening:  Glow Mini-Golf     

2.       OMSI:  Museum of Science:  Younger children have a whole exhibit hall geared towards hand-on exploration called The Science Playground, built for kids 6 and under.
P.M. “Washington Park is next to downtown Portland and home to one of the best playground in the city.” 

3.       Children’s Museum A.M.
P.M. Washington Park was the perfect place to play again; this time Shark-Dragons with an energetic aunt.

BLUEBERRY-LEMON SPONGE PIE: my daughter said this was the best blueberry pie she has ever had. 

First, you cook the blueberries and a lemon sauce.
Incorporate the sauce in the meringue.  This creates the "sponge" on top.
