SPLIT PEA & SAUERKRAUT VARENYKY
1 cup dried yellow split peas
1 cup beef stock (fresh or packaged)
1 tsp salt
½ tsp pepper
¼ tsp dried marjoram
1 onion, finely chopped
2 cups drained sauerkraut
*Soak peas overnight. Then drain.
*Cook peas with water and beef stock until
peas are tender (about one hour).
*Sauté onion until browned.
*Drain peas, add spices, and purée.
*Stir in sauerkraut and onion.
*Fill varenyky.
