Feeling Lost?  Tell directions by your watch:  Place your wrist watch face up in the palm of your hand.  Turn it so that the hour hand points toward the sun.  Half-way between the hour hand and the figure twelve will be due south.  (Scouting trick)

Feeling Hungry?
Criteria for a Hiking Sandwich:  It should NOT be mushy or be put together with ingredients that spoil quickly.  It occurred to me that something enclosed like a calzone would be perfect.  


HIKING SANDWICH – TUNA TURNOVERS


FILLING INGREDIENTS:

1 can tuna (7 ounce = 170 g)
4 ounces mozzarella
¼ cup mayonnaise
1 tsp tomato paste
½ cup finely sliced green onions
          Drain and flake the tuna.  Cut the cheese into small cubes.  Combine tuna and cheese with the other filling ingredients.


DOUGH INGREDIENTS

2 cups all-purpose flour
1 tbsp baking powder
½ tsp salt
¼ tsp pepper
1 large egg
½ cup milk or buttermilk
1/3 cup olive oil
2 tbsp finely chopped fresh herbs (choose from dill, basil, thyme, parsley, lemon zest)

*Preheat oven to 375.
*Put flour, baking powder, salt, and pepper in mixing bowl.
*In another bowl, lightly beat the egg.  Stir in milk, oil, and herbs.
* Gather dough into a ball (knead a very little if necessary to blend).
*Cut dough into 8 equal parts.
*Roll each part into a circle.
*Distribute filling onto 4 of the circles.
*Cover the filled circles with the remaining circles and pinch edges.
*Bake for 20 to 25 minutes until golden brown.

These are also great if you serve them at home with a salad.
