Discovery . . . and Buckwheat Pancakes

A discovery!

On my frog’s smooth, green belly

there sits no button.

BUCKWHEAT & BLUEBERRY PANCAKES : 

            Adapted from REBAR MODERN FOOD COOKBOOK



½ cup buckwheat flour
¾  cup unbleached flour
¼ cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs
1 ½ cups buttermilk
2 tbsp molasses
1 cup blueberries

*In a medium bowl, stir together dry ingredients.
*Whisk eggs in a large bowl.  Stir in buttermilk and molasses.
*Add dry ingredients to large bowl and stir lightly.
*Heat griddle.
*Add butter generously.
*Pour in pancakes and dot with blueberries.
*Cook on both sides and serve with maple syrup and extra butter.  YUM!
